Redmine 1.0.0-RC released with support for sub-tasks!
According to the release note this is a release candidate, but should be stable enough to be tested out in production environments (on your own risk as usual). This release contains a lot of bug / security fixes as well as the much anticipated sub-task support!
Redmine
I find that surprisingly few people actually know about Redmine (It's starting to change though). For years I've been annoyed with how hard it is to install and maintain Trac, and it's missing support for multiple projects. About a year ago I googled " trac alternative " and found out about Redmine at Stackoverflow (where else?).
Redmine has support for multiple projects, wiki, permissions and the most common version control systems (++). Unlike Trac you can do most of the configuration through a nice web interface.
Sub tasks!
(sorry for the poor jpeg, long story)
Before Redmine 1.0 you could organize related tasks by marking them as related. Sub tasks is a much nicer and more informative way of doing this. Estimated time for a parent tasks is calculated by summing up the estimates for it's childs.

I've been using Redmine for around 2 years and like it a lot. I evaluated all of the Web based Issue/Bug tracking systems before deciding on Redmine. My only hassle is it can be difficult to setup and run Ruby apps on a typical Web Server. For various reasons the Redmine install on my server stopped working earlier in the year and I was unable to get it running again. So until I can work this out I am running it locally in a VM using the Redmine Turnkey Linux Appliance, which works a treat. Neville, http://www.surfulater.com
